Hawaiian Kine tripe stew (tripe recipe from Hawaii)

Ingredients


2 pounds of honeycomb tripe
2 yellow onions
2 ounces of tomato paste
4 potatoes
4 carrots
3 stalks of celery
1 tablespoon of alaea Hawaiian sea salt
1 teaspoon of black pepper

Directions

Cut the tripe into large squares. Place it in a large pot with water. Add the cubed onions and bring to a boil. Lower the heat to medium, and stir in the tomato paste, then cover and let it simmer between one and two hours. In the meantime, peel the potatoes, cut them in cubes and set them aside. Cut the carrots and the celery stalks in large pieces. Once the tripe is tender, add the cubed vegetables, cover and simmer for another 20 minutes. At this point remove some of the potatoes, mash them and add them back to the pot. Adjust with red salt and pepper, stir one more time and let simmer for five more minutes before serving.
